"Jorge produces Colombia and Caturra varietals on about 7 acres of land. He picks the cherry at peak ripeness and then manually de-pulps using hand crank machines and ferments the stripped beans for upwards of 16 hours. The coffee is washed and then dried on raised parabolic beds for 10-15 days
